Bacteriological harmlessness in mexican export shrimp

Abstract
THE OBJECTIVE OF THIS WORK WAS TO INVESTIGATE THE SAFETY OF EXPORT SHRIMP IN MEXICO DETECTING SIMULTANEOUSLY SALMONELLA SPP AND VIBRIO CHOLERAE O1 USING THE PCR-RFLP AND STANDARD MICROBIOLOGICAL METHODS. SEGMENTS OF DNA LOCALIZED IN THE INV A GENE OF SALMONELLA SPP AND CTX AB GENE OF VIBRIO CHOLERAE O1, WERE AMPLIFIED IN THE PCR REACTION. SAMPLES OF RAW, FROZEN AND HEADLESS SHRIMP FROM TWO CERTIFIED EXPORTATION PACKING PLANTS FROM SINALOA, MEXICO, WERE COLLECTED FROM OCTOBER TO DECEMBER OF 1999. BOTH MICROBES WERE DETECTED UNDER THE FOLLOWING CONDITIONS: ONE CYCLE FOR DENATURALIZATION AT 94°C FOR 5 MIN, THIRTY CYCLES FOR ALIGNMENT (94°C FOR 30 SEC; 58°C FOR 30 SEC AND 72°C FOR 30 SEC); AND 72°C FOR 5 MIN WAS USED FOR FINAL EXTENSION. FROM THE 60 SAMPLES ANALYZED FOR BOTH METHODS, NONE OF THEM WERE POSITIVE TO EITHER ONE OF THESE MICROORGANISMS.
